The best trail for a group of novice hikers is right where the train
drops you on the rim - the Bright Angel Trail. By the way, dogs are
not allowed...

Many of your questions can be answered from looking at hiking books (exposure is relative, I have met people that were afraid to walk the Bright Angel Trail)...
