An easy way to dehydrate chicken is to buy the chicken in cans, press out all the
moisture you can, and then dehydrate. It re-hydrates wonderfully.

I dehydrate lots of stuff for trips, but not potatoes. You can buy a large variety of
dehydrated potatoes in the grocery store.
