I would go for Las Vegas becuase from Denver you have to go over a ~11,000 pass. Also the most direct route from Salt Lake to Moab goes over some high passes...

There are regular commercial flights to Grand Junction, which is about
2-1/2 hours from Moab. Definitely a more expensive option.
