Both times I hiked the Escalante route I started out from Cardenas Beach. It is a large beach with plenty of good camping. The Escalante route starts there...

We stayed at the Unkar Rapids overlook on night 2 and 75 mile on night 3
when we did this trip several years ago. Both nice spots as I recall.
