For a strenuous hike with great views up and/or down Oak Creek Canyon, the North Wilson Mountain trail has always been a favorite of mine.

One of the of the PHX REI's is easy to get to and doesn't take you
much out of the way to the Canyon. It's north from the airport on a
major thoroughfare...

Bear Mountain Trail is one of my favorites, somewhat challenging with great views all the way to Flag.
