If you're doing this as a day hike, you should be able to carry enough water for the long loop around the entire mesa or either of the half loops off the tip...

I definitely am not the rock formation expert here but our group did the exact same thing you did.......we followed a heavily cairned route way, way too high...

BTW We use a Garmin 60CSx, mainly on Lake Powell and other large lakes where it isn't always obvious where you are.
Took it down the Pt. Huitzil route last...
